“It’s the weekend! Time for a sweet treat”

INGREDIENTS:
- 3 eggs
- 1 mashed banana
- 1/4 cup coconut flour
- 1/2 cup coconut milk
- Coconut oil
METHOD:
- Crack the eggs in a bowl and mix
- Add the mashed banana, coconut milk & coconut flour and mix together
- Put bowl in a fridge for 20 minutes, to allow the coconut flour to thicken and absorb the liquid
- Heat a frying pan over a medium heat and add the coconut oil
- When the pan is hot add 2 spoonfuls of mixture from your bowl, which will make 1 pancake.
- Cook until firm and flip to cook the other side until golden brown.
- Repeat process untill all of the mixture in the bowl is used.
- If desired serve with honey & raspberries
